Ingredients

1 small onion
4 tomatoes
4 garlic cloves, chopped
2-inch ginger, chopped
2 teaspoons olive oil
1 teaspoon turmeric
2 teaspoons ground cumin
Salt, to taste
1 teaspoon paprika
2 medium sweet potatoes, cubed small
2 small cauliflowers, diced
2 tablespoons fresh cilantro for topping, chopped

Directions : 

1. Blend the tomatoes, garlic, ginger and onion in a blender.
2. Add the oil and cumin in the instant pot and Sauté for 1 minute.
3. Stir in the blended mixture and the remaining spices.
4. Add the sweet potatoes and cook for 5 minutes on Sauté
5. Add the cauliflower chunks and secure the lid.
6. Cook on Manual for 2 minutes at High Pressure.
7. Once done, Quick release the pressure and remove the lid.
8. Stir and serve with cilantro on top.
