Ingredients :

2 tbsps. extra-virgin olive oil
1 lb. fresh baby spinach
3 garlic cloves, minced
1 lemon zest
½ tsp. sea salt
4 chicken breast
halves
1/8 tsp. freshly ground black pepper
½ cup Feta cheese, crumbled

Directions : 

1. Preheat the oven to 350°F.
2. Preheat the oil and skillet over medium-high heat.
3. Cook the spinach for 3–4 minutes.
4. Cook the garlic, lemon zest, sea salt, and pepper.
5. Cool slightly and mix in the cheese.
6. Spread the spinach and cheese mixture in an even layer over the chicken pieces and roll the breast around the filling.
7. Hold closed with toothpicks or butcher’s twine.
8. Place the breasts in a 9-by-13-inch baking dish and bake for 30–40 minutes.
9. Take away from the oven and let rest for 5 minutes before slicing and serving.
